The ‘Macarons de Paris’ is a very delicate cookie made from beaten egg whites, sugar and finely ground almond powder.
The trick is to get a nice round, smooth surface with a filled core.

  1. Whip the egg whites together with the sugar

  2. Macaronize by adding the almond powder

  3. Spray on baking paper and bake.
